    It's probably going to be just me tonight, so I don't know what I'll have. I don't know if Miss E will be home for dinner or not, so I may just poke around in the fridge and see what leftovers are still edible or just make a patty melt. Schedule of meals is tentative, and is usually rearranged based on what we're hungry for on any given night.

    Tomorrow (meeting night): Belated Cinco de Mayo food. In other words, TACOS.
    Monday (laundry night): cheesy hot dogs and tots
    Tuesday (meeting night): Hamburger Helper
    Wednesday (meeting night): Tuna Helper
    Thursday: Pork chops, mashed potatoes, green beans
    Friday: TBA, grocery delivery night

    Grilling chicken that I had marinating in tequila and lime. Roasting some corn that I have creamy sauce (street corn style) to put over the top. Rice and beans

    Ended up not having to cook tonight. They had pasta, salad, breadsticks and dessert catered in from Olive Garden. Nummy nums!

    I love love love chinese food but our go to chinese place loads everything down with salt~ If we order from them, Iā??m up all night long visiting the bathroom.

    We're having cheesy hot dogs and tater tots. I'm already planning next week's meals:

    Sunday (meeting night): homemade pizza
    Monday (laundry night): brats and fries
    Tuesday (meeting night): chicken sandwiches and tater tots
    Wednesday (no meeting!): grilled chicken breasts, mashed potatoes, green beans
    Thursday: Hamburger Helper
    Friday: Grocery delivery day

    I don't include Saturdays because I'm usually on my own, Miss E goes with her daddy, and I forage around and come up with something for myself. Usually breakfast-for-dinner.

    lol...No still the owner but as well as over salting, Their quality and portion sizes have gone down as well. Dinky portions are common around here though.

    Switching the menu around a bit. Making the chicken tonight and the pizza Wednesday, at least I think I'll make the pizza Wednesday....I just felt like having an actual meal on Mother's Day. I love cooking, so I'm not one bit upset about cooking it myself. Besides. If Miss E cooked, we'd have cereal. LOL

    It's just me tonight, so I foraged in the freezer and have chicken nuggets and tater tots in the oven. Here's my week's tentative menu. I say tentative because I usually end up rearranging things around depending on cravings or time to cook dinner. Except on Sundays. Some of these meals I ended up not making last week (or the week before) and are carried over.

    Tonight: nuggets and tots
    Sunday (meeting night): sausage, egg, and cheese biscuits for brunch and pizza for dinner.
    Monday (laundry night): beef ravioli and cheesy garlic bread
    Tuesday (meeting night): Hamburger Helper
    Wednesday (meeting night): Hot dogs and fries
    Thursday: pork chops, mac and cheese, and green beans
    Friday: Grocery delivery, so I'll add something to the list for dinner.

    Chicken salad sandwich for me, "ramen noo-noos" for Miss E. Groceries came so the tentative meal plan for next week is:

    Saturday (Miss E goes with her dad): Cheesy pasta side kind of like mac and cheese but kind of not. I fend for myself when she's gone.
    Sunday (meeting night): Homemade pizza
    Monday (laundry night): Brat burgers and Pringles
    Tuesday (meeting night): Sausage, egg, and cheese biscuits
    Wednesday: Baked chicken breasts, mashed potatoes, and green beans
    Thursday: Hamburger Helper
    Friday: Grocery delivery day and fend-for-yourself (from the ordered groceries)

    Miss E's been with her aunt all weekend so I've been lax in the meal planning. Groceries came Friday night and I shopped the pantry here tonight. We're eating lots of "summer food" this week. I like "summer food" because most of it is pretty quick to cook especially on weeknights when I don't get home until 5:30 and have meetings at 5:45.

    Last night: Frozen White Castle burgers and tater tots
    Tonight (meeting night): No clue, not hungry yet. Probably noodles with cheese.
    Tomorrow (laundry): Brat burgers and chips. They're REALLY good. They taste just like brats, but in patty form you eat like a burger. I top ours with cheese.
    Tuesday (meeting night): Hot dogs and tater tots.
    Wednesday: "Doctored" Hamburger Helper. I'll add extra cheese and a can of mushrooms.
    Thursday: Stuffed cheeseburgers and tater tots.
    Friday: Grocery delivery and "Fend for yourself from what is ordered."
    Saturday: Fend for myself while Miss E is with her daddy
    Sunday (meeting night): Pizza, I'm teaching another resident here how to make homemade pizza.

    A big can of beef stew. I took my regular dose of insulin. And not long after I started burning up and seeing stars. Yep, my blood glucose had dived to 45. I was fixing to go into a coma. I ate the last fourth of my small birthday cake and it rose to 105.

    Hi Cindy, If you don’t mind me asking.. Are you type 2?
    About 3 weeks ago I had taken a fall couldn’t get up again, long story short my glucose was hovering around 600- I had no clue that there was something wrong. Was in the hospital a week-Diagnosed type 2- I am right at about 200 now still taking insulin and trying to figure out what is what, Watching the carbs, might just have scrambled eggs tonight.

    I sure do appreciate you offering to help me..19 years. wow. The doctors guesstimate this could have been festering for quite some time. I am having a very hard time accepting it. I have never been one for restrictions of any kind but maybe thats what put me in this spot?
    On the upside my reading was 141 tonight so, I didnā??t need the insulin. Weā??ll see what it is before bed, Thats when I take the long lasting stuff.

    I had pizza for lunch, it was good but man I could taste all the sodium and such in there, tonight I am going to make strawberry banana smoothie,
    tomorrow I may make salmon, veggies and my homemade mac and cheese,
    Here is my mac and cheese recipe 1 package of egg noodles or elbow noodles
    1 package of cream cheese (cubed)
    2-3 cups of shredded cheddar (I will sometimes buy a block of cheddar from the deli or from the dairy section and shred it myself or if I am feeling lazy I'll just pull out the already shredded packaged stuff)
    enough milk to make the cheese creamy
    about 1 tablespoon or two of butter
    make pasta according to directions, drain and set aside, melt butter in the pot you used to make the pasta in, add in the cubed cream cheese stir and keep heat on low or you can stay there and make sure it dosen't scorch, get it as melted as you can, add in cheese and add in enough milk to make the cheese creamy, remove from heat, add in pasta and coat with sauce, and add pepper to taste, I don't salt mine at all, due to the salt in the cream cheese and the cheese.
